My sister-in-law, Bobbi Jo, is at it again with two new fabulous recipes – perfect for summer! She is always sharing pictures on Facebook of the yummy recipes that she creates, and these latest two are totally share-worthy.
Watermelon is a great summer fruit to snack on when trying to stay cool and refreshed. Get ready to drool over this Watermelon Mint Summer Salsa recipe:
- 4-5 cups seedless watermelon, diced
- 1 cucumber, diced
- 1 red onion, finely minced
- 1 bunch of cilantro, finely chopped
- 1/3 cup fresh mint, finely chopped
- Juice from 2 limes about 1/3-1/2 cup
- 2 tsp hot sauce
- 1 tsp salt
Directions
Combine all ingredients, cover and chill for an hour. Serve with tortilla chips.

Watermelon Mojito
Ingredients per glass
- 6-8 fresh mint leaves
- 1/2 cup cubed seedless watermelon
- 1-2 packets of sugar or sweetner
- Juice from half a lime
- 2 ounces of light rum
- Ginger Ale, 7-Up, or soda water
Directions
Use a mortar to mash the mint leaves and watermelon with a small amount of ice. I use the glass I’m serving in to mash the ingredients. Once it’s mashed fill glass with more ice, then add rum, sugar, lime juice and top with ginger ale, 7-up or soda water. Stir to combine. Garnish with sprigs of fresh mint and serve ice cold.
