This recipe might have you singing a familiar song, “Put the Lime in the Coconut.” 😉 If you’re hosting a party of any kind and want some fun cupcakes to include at the dessert table, these Lime and Coconut Cupcakes will do just that! Don’t forget some colorful cupcake liners to make these scrumptious cupcakes party – perfect.

Lime and Coconut Cupcakes

Ingredients for the cake:

• 1¼ cup flour
• 1 tea baking powder
• ½ tea baking soda
• ½ tea salt
• 2 eggs (room temp)
• ¾ cup sugar
• ½ cup oil
• 3 tea lime zest
• 4 Tbsp lime juice (1 medium lime)
• 1 tea coconut (or vanilla – if not on hand) extract
• ¾ cup Milk (whole)

Directions:

-In a medium sized bowl add the flour, baking powder, baking soda, and salt and combine

-In a separate bowl whisk eggs and sugar

-Add the oil, lime zest and juice, coconut extract, and milk to the eggs and sugar mix

-Combine the dry ingredients into the wet ingredients and lightly mix

-Line a cupcake pan with paper cups and fill each cup ¾ full

-Bake at 350 degrees for 18-20 minutes

-Use a toothpick to test the center of a cupcake

-Allow cupcakes to cool to room temp before frosting

Ingredients for Frosting:

• 8oz cream cheese (1 box)
• ½ cup unsalted butter room temp
• 1½ tea coconut (or vanilla – if not on hand) extract
• 1½ cups powdered sugar
• 2 to 4 Tbsp toasted coconut
• Small Lime slices as garnish

Frosting Directions

-Beat the cream cheese using a hand mixer, adding butter 1 Tbsp at a time on medium speed until all butter has been added

-Add coconut extract and powdered sugar and mix until combined

-Do not over beat frosting

-Place frosting into a pastry bag with an frosting tip and frost the cupcakes

-Garnish with a wedge of lime and sprinkle of toasted coconut
