Do you all love couscous? Traditional in North Africa, couscous is coarsely ground pasta made from semolina. It actually doesn’t have much flavor, but if you add some yummy extras, like tomatoes and bacon it will elevate the dish to another level.
The whole wheat version, which I used in the recipe below packs 5-6 grams of fiber per serving too! So….let’s get onto that recipe!

Tomato and Bacon Couscous Salad
Doesn’t it look amazing? It’s really, really easy to create too. Here’s what you’ll need!

Ingredients:
- whole-wheat couscous
- chicken broth or vegetable broth
- salt
- butter
- baby spinach
- cherry tomatoes, quartered
- 4 slices of bacon, cooked & crumbled
- balsamic vinegar and olive oil (optional)
Directions:
Cook the couscous as directed on the box. I cooked mine with 3 cups chicken broth, 1/4 tsp kosher salt and 1 tbsp butter.
Once cooked, pour the couscous in a fine mesh strainer and run under water to remove the excess starch. Otherwise, your couscous will be very sticky.
Shake any remaining water from the strainer and pour the couscous in a large size bowl. Add tomatoes, bacon and baby spinach and toss.
Optionally, before serving drizzle a bit of balsamic vinegar and olive oil over top. Enjoy!

I love Couscous. I also love Avocados and would never have thought to add them to it. I am going to give it a try! The only thing I add to it now is a little bit of ground pepper as well as lemon .
