Homemade Hot Pockets
Ingredients
For the Crust
1/2 Cup all-purpose flour
1/2 Tbsp yeast
1/8 Cup butter at room temperature
1 Tsp salt
1/2 Tbsp sugar
1/8 Cup water
For the Filling
1/2 Cup shredded provolone cheese
1/2 Cup ham bits, or other choice of meat
1 Cup all natural yogurt
1 Tbsp buttermilk
2 Medium Lemons, or 6 Tbsp lemon juice
Directions
Combine flour, yeast, butter, salt, sugar, and water and stir until evenly blended and mix becomes sticky.
Roll into a ball and cover with plastic.
Set in refrigerator for 45 minutes.
Place dough on a lightly floured surface and roll it out into a large circle.
Take a cookie cutter and cut smaller circles out of the dough.
Add the cheese and ham bits to the center of the dough.
Fold the edges together and press them down with the tip of a spoon or fork to shape.
Bake until dough is crispy and golden brown.
To make sour cream:
In a small cup combine yogurt and buttermilk.
Whisk in the lemon juice until mixture starts to thicken.
Remove hot pockets from oven and drizzle sour cream on top.
Serve and enjoy!
Tip: Want an Italian version? Try swapping out ham for pepperoni. Feel like street food? Try adding small pieces of steak for a steak and cheese hot pocket. Yum!
