Ingredients
1 lb ground beef
2 Whisked eggs
1 Tbsp chopped chives
1 Tbsp salt
1 Tbsp pepper
1 Cup whole grain or Italian bread crumbs
1 1/2 Cups olive oil
1 Cup grated mozzarella cheese
1 Cup tomato sauce
Chives and cilantro to garnish

Directions
Mix the ground beef with the breadcrumbs, half of the cheese, a handful of chives, salt and pepper.
Roll into 12 balls.
Dip balls into egg batter.
In a large pan heat 1 1/2 cups of olive oil.
Fry meatballs until thoroughly cooked. Meat should be brown. Set aside
Preheat oven to 400 degrees.
Lay meatballs on a flat baking dish lined with aluminum foil.
Top with grated mozzarella cheese and drizzle with tomato sauce.
Heat uncovered until cheese is completely melted.
Remove from oven and let cool 2-3 minutes.
Garnish with cilantro. Serve and enjoy!
