Almond Joy Energy Balls Recipe
These energy bites are great for breakfast on the go and quick energy boosts before a workout, or during that 3 pm slump.
Measurements with easy to follow printable directions are at the end of the post.
Ingredients:
1 c old fashion oatmeal oats (dry)
1/2 c dark chocolate chips (60 or 72% cacao)
2/3 c unsweetened coconut flakes
1/2 c whole health seeds (flax, chia, and hemp seed blend)
1/2 c almond butter
1 tsp vanilla extract
8 Medjool dates (pitted)
1/2 c almond milk
Tip: Don’t have dates on hand? Try an alternative like cranberries. Want more chocolate? Add chocolate protein powder or cocoa powder to the mix!
Directions:
- In a food processor, add dates, vanilla extract, and almond milk, pulse or press low until dates are minced in small pieces and blended with almond milk.
- In a separate large bowl add oats, chocolate chips, coconut flakes, seeds, almond butter, and date mixture, stir until ingredients are all combined.
- Place in fridge to firm up for about 15 minutes then using your hands roll into 1-inch balls (makes about 15-16 balls).
- Place back in the fridge for another 15 minutes, then enjoy. You can keep the energy balls in an air-tight container and store in the fridge for up to a week. Freeze for longer-term storage.
Another option is placing this mixture in a square baking dish with parchment paper. Refrigerate and cut into energy bars when ready to eat. Whatever way you enjoy them, you will love this recipe!
