Ingredients
2 cups mixed frozen berries 1 1/2 cups almond milk 3/4 cups oats 1/4 cup almonds 1 tablespoon coconut milk (optional) 1 tablespoon agave syrup 2 tablespoons chia seeds 6 tablespoons water 2 bananas
Instructions
1. In a small bowl, mix chia seeds with water. Let it soak while you prepare caramelized berries and bananas. 2. Heat a nonstick pot on medium heat. When hot, place bananas and let it caramelize for 1 minute. If you wish, you can add a few drops of agave syrup. Flip gently to cook the other side. Remove from pot and set aside. 3. In the same pot, add mixed berries with 1 tablespoon agave syrup. It will start to lose the excess of water then it will evaporate to form a thick red sauce. Stir for a few moments then remove from heat. 4. In a new medium nonstick pot, add oats. Let oats roast a bit on medium heat then add milk and stir until a thick consistency. Remove from heat and transfer in 2 serving bowls. 5. Now that chia seeds are soaked, add 1 tablespoon of coconut milk (optional). Combine well. 6. Top oats with chia pudding, almonds, caramelized berries, and bananas before serving.
