Here’s what you’ll need for the Chicken and Rice Tacos Recipe:
Ingredients
- 1 garlic clove, minced
- 2 tablespoons butter
- 2 cups cooked chicken
- 1 tablespoon chili powder
- 2 3/4 cups chicken broth, divided
- 1 jar Picante sauce, divided
- 1 bag (2 cups) Success® White Rice
- 3 cups shredded Mexican cheese blend, divided
- 8-10 flour tortillas (I used Artisan Flatbread)
Directions
In a skillet, saute garlic in butter until tender. Stir in cooked chicken, chili powder, 1/4 chicken broth, and 1/3 cup Picante sauce. Heat through and set aside.
Cook rice as directed on the packaging. Next, in a medium saucepan add rice, 2 1/2 cups chicken broth, and 1 cup of Picante, cover, and simmer for 5-10 minutes. Stir in chicken mixture, then add 2 cups of shredded cheese and stir.
Spoon filling into each tortilla, off-center, and fold. Arrange tacos into an ungreased 13×9 in baking dish. Sprinkle with remaining cheese. Cover and bake on 350 degrees for 10-15 minutes, or until heated through.
Garnish with remaining Picante sauce, cheese, and lettuce. Serves 4-5.
