Cookie Butter Bars Recipe
Here’s what you need:
Directions:
Grease and line a 9″ x 9″ casserole dish or cake pan and set aside.
Place the rice cereal in a large bowl and set aside.
Place the agave syrup and sugar in a medium-sized saucepan and place over medium heat. Stir as the mixture combines and melts and just until it begins to boil. Remove from heat.
Stir in 1 cup of the cookie butter and mix well.
Pour the sugar-cookie butter mixture over the rice cereal and stir to coat the cereal completely.
Fold the mixture out into the prepared cake pan and refrigerate as you prepare the topping.
Using a double boiler or a microwave-safe dish, melt the white chocolate chips. If microwaving, heat for 35 seconds, stir well and reheat as needed.
When the chips has thoroughly melted, add the remaining cookie butter and stir to incorporate fully.
Spread the white chocolate-cookie butter mixture over the rice cereal, using an offset spatula.
Return the dish to the refrigerator and continue to cool for 3 hours, or overnight.
And voila – delicious cookie butter bars! They make the perfect treat this season for family gatherings, pot lucks, after school snacks, and more!
This is a great dish the kids can enjoy helping with. Make sure to pin this delicious recipe for safekeeping, and share it with your friends too!
