Dark Chocolate Zucchini Bread
My SIL loves to cook! She whipped up this moist and flavorful bread which makes a great breakfast, snack, or dessert option for the family. This chocolate zucchini bread recipe will make two loaves so if you don’t plan to use both now, you can freeze one for a later date.

Ingredients:
- 2 1/2 cups all-purpose flour
- 2/3 cup cocoa powder
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 4 large eggs
- 2/3 cup avocado oil
- 1/2 cup white sugar
- 1/2 cup dark brown sugar
- 2 teaspoons vanilla extract
- 3 cups grated zucchini
- 1 cup chopped walnuts
- 1 cups dark chocolate chips

Directions:
- Preheat the oven to 350°F. Prepare 2 loaf pans by spraying with cooking spray.
- In a large mixing bowl add eggs, oil, sugars, vanilla, and grated zucchini. Mix well. Next, add walnuts and chocolate chips, stir again.
- In a medium bowl whisk together the flour, cocoa powder, salt, baking soda, and baking powder.
- Add the dry mixture into the wet ingredients and mix until combined. Pour the batter evenly into the prepared pans.
- Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean. Place pans on a wire rack to cool for 15 minutes. Take a butter knife around the edges then flip bread onto the wire rack. Let cool a few more minutes or slice and serve warm.

YUM YUM YUM. My online book club and I are reading Midnight at the Blackbird Cafe and there has been much mention of zucchini bread in the book. So we are collecting recipes for the bread among the members. Will share this recipe with everyone. Sounds delicious. I have never made zucchini bread but bought about 6 zucchinis yesterday to try some of the bread myself. Have pinned a snickerdoodle zucchini bread recipe. Thought it sounded tasty, too. But you can’t go wrong with CHOCOLATE.
