Homemade Ice Cream Recipe – Healthy Mint Chocolate Chip

Ingredients:
2 cans organic coconut milk (unsweetened)
1 cup organic almond milk (original)
6 Medjool dates (pitted) – not a fan? Omit it!
Himalayan pink salt (a pinch of salt)
1 package organic fresh mint
1 tsp vanilla extract
2 large handfuls organic baby spinach (for color – you won’t taste it!)
1 bag dark chocolate chips (63% cacao)

Instructions:
In a blender, add all the ingredients except for the chocolate chips. Blend on high until all ingredients are mixed well and smooth. Pour the mixture into a freezable container and fold in the dark chocolate chips, stir and place in the freezer. Stir ice cream mixture every 60 minutes until the ice cream is fully frozen. Once the ice cream is frozen, scoop it up and serve in a bowl, cone, or over a warm brownie and enjoy!
Tip: Implementing spinach gives the homemade ice cream its green color without using food coloring, plus it has nutritional benefits.
You can also add peppermint extract if you want a mintier flavor.

Love the idea of these healthy ingredients in this recipe. Using spinach to make the mint ice cream green…genius. I love spinach. And I put it in my smoothies. You are right, you don’t taste it. This ice cream sounds delicious and refreshing. And so do the all the other recipes you linked. I have got to get on top of my weight before I get any bigger, though. And then maybe I can indulge!!
