How to Make Poutine Fries
Poutine fries originated in Canada but have since become a popular worldwide snack food.

Ingredients:
- 1/2 stick butter unsalted
- 2 tsp poultry seasoning
- 1/4 c all-purpose flour
- 16 oz beef broth
- 16 oz chicken broth
- 1 tsp ground black pepper
- 2 tbsp cornstarch
- 2 tbsp cold water
- 2 lbs bag regular cut French fried potatoes
- 10 oz Cheese curds or Oaxaca cheese (room temperature and cubed)
- Canola oil (enough to deep fry French fries)

Directions:
- In a large saucepan, melt butter over medium-high heat, add poultry seasoning, and cook for 30 seconds. Next, add the flour and whisk regularly, for about 3-4 minutes. Make sure not to burn.
- Add the beef broth, chicken broth, and pepper while whisking. Bring to a boil.
- In a small bowl or cup mix the cornstarch with the water. Reduce heat then whisk the cornstarch mixture in the gravy. Let simmer for a couple of minutes, whisking regularly, or until the sauce thickens. Keep warm until your fries are ready.
- To cook the fries, heat your oil in a deep fryer to 300° F. Add fries to the oil slowly and cook for about 8-10 minutes, stirring occasionally so they don’t stick. Deep fry until fries are nice, golden, and crispy. Remove fries to a paper towel-lined bowl and season with salt.
Putting together your poutine fries:
Add your fries to a bowl, add a ladle of hot poutine gravy on top of the fries and using tongs, toss the fries in the gravy. Add more gravy, if needed, to coat the fries. Finally, add the cheese curds or Oaxaca cheese and toss with the hot fries and gravy. Serve immediately and enjoy!

i live in northern New Hampshire, less than an hour from the Canadian border and Poutine is very common around here. We call the cheese, squeaky cheese and I could go for some right now.
