Over the last few months I’ve shared some genius ideas from The Wisest Kid in the Whole World for family friendly meals. I really enjoyed this opportunity to learn new recipes for the kids and myself to create together. Those special moments are truly treasured. I learned that my kids, even at their young ages really do like helping out in the kitchen and being a part of the meal preparing process.
Some of my favorite dishes we prepared from Campbell Soup Company are Chicken Broccoli Divan and Chocolate & Banana Cream Puffs. Our most recent dish we created with the kids in the kitchen is Campbell’s Mini Mac & Cheese Cups; it’s actually one of the top 3 most popular recipes on The Wisest Kid website.
Mini Mac & Cheese Cups
Mini Mac & Cheese Cups Recipe
Ingredients:
- 3 tablespoons plain dry bread crumbs
- 1 teaspoon butter, melted
- 1 can (10 3/4 ounces) Campbell’s® Condensed Cheddar Cheese Soup
- 2 tablespoons milk
- 1/8 teaspoon ground black pepper
- 2 cups cooked rotini (spiral) pastaor medium shell-shaped pasta, cooked and drained
- 1 cup shredded Cheddar cheese(about 4 ounces)
Directions:
Step 1 Heat the oven to 400°F. Spray 8 (2 1/2-inch) muffin-pan cups with vegetable cooking spray and lightly coat with 1 tablespoon bread crumbs. Stir the remaining bread crumbs and the butter in a small bowl.
Step 2 Stir the soup, milk, black pepper, rotini and 3/4 cup cheese in a medium bowl. Spoon about 1/3 cup rotini mixture into each muffin-pan cup. Sprinkle with the remaining cheese and bread crumb mixture.
Step 3 Bake for 20 minutes or until the rotini mixture is hot and bubbling. Let stand for 10 minutes before removing the minis from the pan.
L is helping with Step 1 where he layers the bottom of each muffin cup with bread crumbs. And J took care of Step 2 where he mixed all of the ingredients together for us.
Campbell’s Mini Mac & Cheese Cups can be on the table in 50 minutes or less! We loved the new dish, and can’t wait to make it again. I think next time I will add some cooked bacon or sausage to the mix and see how the kids enjoy that.
Curious what other Wisest Kid dishes topped the charts? The Mini Chicken Pot Pies and Cheesy Chicken Potato Casserole were next in popularity. Both of those sound delish!
