Lemon Ricotta Pancakes Recipe
This is meant to be a quick and easy pancake recipe. Measurements with easy to follow printable directions can be located at the bottom of this post.
Ingredients:
- baking soda
- ricotta cheese
- water
- lemon zest
- lemon juice
- vegetable oil
- sugar
- egg
- vanilla extract
- butter
- flour
- syrup (optional)
Note: Yields 10 pancakes. Takes 5 minutes per pancake. I recommend a griddle so that several can be made at one time.
Directions:
- Whisk water and baking soda together in a mixing bowl.
- Add ricotta cheese, lemon zest, vegetable oil, sugar, egg, vanilla extract, butter, lemon juice, and flour until just combined. (Don’t over mix, lumps are okay)
- Over medium-high heat, grease griddle or pan and scoop out ¼ cups of batter on the griddle or pan. When the edges of the pancake start to look dry or when the pancake surface begins to bubble, flip and cook other side until cooked.
