Nothing says comfort food like homemade meatloaf, am I right? To elevate this dish we’ve added a side of cauliflower mashed potatoes which are oh so good! Here’s how to make this delicious dinner recipe.
Meatloaf and Cauliflower Mashed Potatoes
My mom made meatloaf often when we were kids. It’s a favorite family dinner meal of mine. This recipe is a healthier version, especially with a side of cauliflower mash!

Let’s start with the homemade meatloaf. Here’s what you’ll need:
- Ground beef (or pork, veal, lamb, or a mix if you prefer)
- Italian bread crumbs
- whole milk
- ketchup
- eggs
- Worcestershire sauce
- parsley
- yellow onion
- carrots
- garlic
- thyme
- salt and pepper
- olive oil
For the topping:
- ketchup
- mustard
- brown sugar
Meatloaf Directions:
- Heat oven to 350°F. Line loaf pan with parchment paper.
- Heat olive oil in a skillet over medium heat. Add the diced onions and carrots, and cook until the onions are translucent and the carrots have softened (6 to 8 minutes). You do not want to brown the vegetables. Add the garlic and thyme, stir and cook another 30 seconds. Remove from heat and let cool slightly.
- Place the ground meat, bread crumbs, milk, ketchup, beaten eggs, Worcestershire sauce, parsley, salt, pepper, and cooked vegetables in a large bowl. Mix all ingredients with your hands until they are all combined.
- Transfer the meatloaf mixture to the parchment-lined loaf pan. Push down on the mixture to make sure there are no air pockets.
- In a small bowl, add 1/3 cup ketchup, the brown sugar, and mustard. Stir to combine. Pour the sauce on top of the meatloaf and spread it into an even layer.
- Bake uncovered for 55-60 minutes or until the middle of the meatloaf registers at least 155°F on an instant-read thermometer
- Let the meatloaf rest for 15 minutes before slicing.

For the meatloaf: 2 lbs ground beef, (or pork, veal, lamb, or a mix (I used beef), 1 cup Italian bread crumbs, 1/2 cup whole milk, 2 TBSP ketchup, 2 large eggs, beaten, 1 TBSP Worcestershire sauce, 1 tsp dried parsley, 1 tsp salt, 1/2 tsp ground Black Pepper, 1 sweet or yellow onion, diced small, 5-oz carrots matchstick style, 4 cloves garlic, minced, 1 tsp dried thyme, 2 TBSP Olive Oil For the topping: 1/3 cup Ketchup, 2 TBSP Mustard, 2 TBSP Brown Sugar
For the cauliflower mashed potatoes: 1 head cauliflower, 1.5 lbs red potatoes, 1/3 c unsalted butter, 1/4c sour cream (add a little more if not the consistency you like), Salt to taste, Parmesan cheese (optional), Bacon bits (optional), Chives (optional)

For the cauliflower mash: 1 Wash, then slice red potatoes in small chunks 2 Wash, then cut up cauliflower into bite-sized pieces 3 Cover vegetables with water, cover with lid and get water to a boil. 4 Once water starts to boil turn down heat and cook for 30 mins. 5 Strain potatoes and cauliflower then put in bowl with sour cream, butter and add salt to taste. 7 Mix with hand mixer or potato masher. Once you get the consistency and taste you prefer, then add Parmesan cheese and stir with spoon. 8 For color you can add diced chives and for more flavor bacon bits. Enjoy!
