Summer is heating up and there’s no better time to try this easy dinner favorite that’s ready in less than 30 minutes! All you need is some veggies and a sheet pan and you can feed aplenty with this one-pan veggie fajitas recipe!
One-Pan Veggie Fajitas Recipe
Pair these veggie fajitas with lettuce wraps if cutting carbs, or flour/corn tortillas, and top with a squeeze of sliced limes for ultimate flavor. This is a fantastic meal for big family gatherings!
You can pre-slice all the veggies and have them ready to pop in the oven, then everyone can serve themselves. Easy peasy and clean-up is simple too!

Fajita Seasoning Ingredients:
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tbsp coriander
- 1 tsp kosher salt
- 1/2 tsp ground black pepper
For Fajitas:
- 1 medium onion sliced thin
- 3 bell peppers (any color) sliced thin
- 1 zucchini sliced thin
- 1-2 portobello mushrooms sliced thin
- 1 lime juiced (about 1 tbsp)

Veggie Fajitas Directions:
- Thinly slice onions, peppers, zucchini, and mushrooms, and place in a bowl. Set aside.
- In a small bowl add all fajitas seasonings and mix together.
- Preheat oven 375° F
- On a large baking sheet cover with foil or parchment paper. Place veggies on the covered baking sheet.
- Drizzle olive oil, lime juice, and 2 tablespoons of seasoning over the veggies. Using your hands stir the veggies.
- Place veggies in a pre-heated oven and cook for 20-25 minutes.
- Serve with tortillas/lettuce wraps, sliced avocado, extra lime, sour cream, and salsa.
Tip: any excess fajita seasoning can be stored in an air-tight jar.
