Smashed Potatoes Recipe – Two Ways
The first way to make these potatoes is with ranch seasoning. Here’s what you’ll need to get started.
Measurements with easy to follow printable directions are at the end of the post.
Ingredients:
- 1-1/2 lbs little red and yellow potatoes
- Olive oil
- ranch powder mix
- 2 tbsp butter unsalted
Directions:
- To cook potatoes in Instant Pot, add 2 cups of water, then place clean potatoes in a steamer basket, attach lid, set the vent to sealing, and set manual for 2 minutes. Once pressurized and the 2 minutes have passed, let it natural release for 5 minutes. Then turn valve to full release. Open lid and carefully remove the basket of potatoes. Let potatoes cool for 5 minutes in basket.
• Other ways of cooking the potatoes include boiling, steaming, or microwave. - Next, preheat oven to 425°F then line baking sheet with parchment paper.
- Place potatoes on parchment paper then smash down with a potato masher, metal spatula, or the bottom of a glass jar. Make sure to keep the potato in 1 piece. The thinner you smash the crispier. The thicker the fluffier in the middle.
- Melt butter then add 2 tbsp olive oil, stir. Using a pastry brush drizzle butter and oil mixture over each potato. Sprinkle potatoes with ranch powder. Bake for 25-35 minutes or until golden and crispy. Serve hot!
If you don’t have ranch powder mix, you can do a simpler seasoning of salt, pepper, and garlic powder. (pictured below) Just follow the same instructions above.
