People seem to be happier once spring hits. The weather is warmer, the flowers begin to bloom, and people tend to spend more time outside. These bite-sized Spring Sugar Cookie Sandwiches are a great addition to a backyard BBQ, birthday party, family get-together, and more. Grab the recipe below.
Spring Sugar Cookie Sandwiches Recipe

Ingredients:
- powdered sugar
- butter
- egg
- vanilla
- sugar
- baking powder
- food coloring
- almond extract
Directions:
Step 1: Preheat the oven to 375 degrees.
Step 2: Combine 1 cup softened butter and 1 ½ cups powdered sugar in a mixer and blend on medium for 2 minutes.
Step 3: Add in the egg and vanilla and beat on medium for one minute more.
Step 4: Combine flour and baking powder and then add it to the mixer with your wet ingredients. Beat on high for another two minutes.
Step 5: Place the sugar cookie batter into three separate bowls and mix in food coloring in your colors of choice. We went with a light blue, pink and yellow for ours.
Step 6: Roll the sugar cookie dough into small balls and place on an aluminum foil-lined cookie sheet. It will be sticky, so you can roll each ball in some white sugar to make it more manageable if you wish.
Step 7: Bake for 7-9 minutes, keeping an eye on them so that the edges don’t start to brown.
Step 8: While the cookies are baking, combine all of the icing ingredients in a mixer and mix well for 3-4 minutes.
Step 9: Remove the icing from the mixer and set off to the side in a bowl for later use.
Step 10. Once the cookies are done baking and have cooled, place some icing on the bottom of one and press another cookie down on top of the icing to form a buttercream cookie sandwich.
