The fall season is right around the corner which means sweet potatoes will be in peak season. We have two delicious sweet potato recipes to share with you – today’s is Buffalo Chicken Stuffed Sweet Potatoes. This recipe is perfect for lunch or dinner!
Stuffed Sweet Potatoes with Buffalo Chicken
We’ve topped this fall sidekick with chicken, peppers, onion, blue cheese crumbles, and more. You will be pleasantly surprised that this stuffed sweet potato recipe will fill you up!

Ingredients:
- 4 medium sweet potatoes, washed
- 2 Tbsp olive oil, divided
- 2 chicken breast diced
- 1/3 cup yellow onion diced
- 1 cup broccoli, cut into small pieces
- 1/3 cup red bell pepper diced
- 1 tbsp fresh lemon juice
- 1/3 cup real bacon crumbles
- kosher salt
- ground black pepper
- blue cheese crumbles
- Buffalo sauce, such as Frank’s
- Sour cream or plain Greek yogurt (optional)

Directions:
- Using fork tines, poke sweet potatoes a few times, rub with olive oil and sprinkle with a little salt, place them directly on a rack in the oven. Bake for about 45 mins-1 hour, depending on their size. Potatoes should be soft.
- While potatoes are baking, dice the chicken breast in bite-size pieces. In sauté pan add 1 tbsp olive oil, heat over medium heat. Add chicken, sprinkle lightly with salt and pepper, cook until no longer pink. Remove from pan and set aside.
- Wipe pan clean and add 1 tbsp olive oil, heat over medium heat, add diced onions and cook 1-2 minutes until soft, add broccoli pieces, add bell peppers, lemon juice, a sprinkle of salt and pepper. Cook another 3 minutes until veggies are softened. Next, add cooked chicken back to pan and bacon pieces, stir and cook for an additional 3 minutes.
- Once the potatoes are cooked through and the chicken/broccoli mix is cooked, let’s build your sweet potatoes!
- Using a knife score your potato lengthwise then crosswise. Next, stuff it with your chicken and broccoli mixture. Top with blue cheese crumbles, a few more bacon pieces (optional), and drizzle buffalo hot sauce. You can also add a dab of sour cream or plain Greek yogurt for optimum flavor.
